I think the problem with doing that is possible torque converter issue and output spline shaft count and mounting. A Chrysler torque flight A900 series was behind the 2.5L from the factory for the AMC years.

The AMC 2.5 has the GM small transmission bellhousing setup.  So the Chrysler automatic came with that GM bellhousing.  Welcome to AMC...

 

If you get an early S10 with a 2.8 V6 and 700R4 it'll have the right bellhousing.  The 4.3 V6 and all V8s had a different bellhousing.

 

I don't know about the flex plate.  I suspect it would need to be custom made.

 

So it may be possible but it might not be easy.

From the world of drag racing there is a ultra bell . It allows you to put just about any engine combination to any transmission. There are a couple manufacturers so google ultra-bell bellhousing and you might find something if you go down this road.
