vacuum hose specs?

Specs? As in sizes? Replace the ones you want to keep with 3/16" brake line. If you are going around the EGR, most of those lines will go away. Most of the Vacuum mess is all to do with the EGR system (from valve to transducer then on to the fender mounted solenoid) and a few more for the heat stove (which is really all but useless with efi anyway ... Another throwback to carburetion).

What you'll be left with is the FPR line, the MAP line, and the CCV line.

i was going to install the oil catcher cause half of  my air filter was covered in oil

If all the vacuum harnesses were intact, along with the grommets in the valve cover, your air filter might not be covered in oil.

yeah I'm planning on doing this after I get all the major things done to get her on the road the vacuum hoses I am replacing now are the airbox hoses should have been more specific on which vacuum hoses. the 3/16 brake line replaces the plastic lines that go into the harness near the airbox. can i use metal brake lines to replace these or should they be plastic as well ?

It's not hard to put a simple oil catch can in if you want to help prevent oil and you have already done everything you can to prevent it.  I have a cheap e-bay unit that I bought.  I added a simple tube to the inlet fitting with some holes in it to help direct the oil down but keep air drawn in.  I am looking to mount it to the air box for simplicity.  If you want to go even cheaper, a good sealed jar and a couple of fittings from the hardware store would work.   Now, if you want something to collect oil that would otherwise go into the intake manifold, you will want an actual separator for the line coming off the rear of the head.
