I am thinking about buying new wheels when I upgrade from my 33" to 35" tires. I am going with an 8" rim. What back spacing should I go with?

A 12.5 inch wide TIRE is hard to fit under the fenders with any reg BS'd rim.

 

This is why many guys go with 10.5 wide tire and a rim with 4" of BS. While 4.5" BS even fits better, but is not avalible as a std size in BS.

I am going to get 35X12.50. I have never really liked the look of the 10.50 tires. I want to try and find a set of plain steel wheels like this one.

I am sure that I would have to order it with the size I want.

I've got 35 x 12.50 with a 4.75 backspacing. They rub the LCA's a little at full lock, but I am able to run stock flares. Also my rims are 15 X 8's.

Check on Summit for the rims. You can pick the width, diameter, BS and offset, as well as bolt pattern. They are not too much $$$ either.
