Luckily those damn carp haven't made it here - yet.........

 

How to prepare blue catfish.

 

1. Fillet and skin

2. Slot the filets and stuff with celery strips and onion

3. Season liberally with Old Bay brand seafood seasoning

4. Wrap fillets with banana leaves

5. Tack fillets on a 3/4"x6"x24" hickory board

6. Slow bake at 280* for 1-1/2 hour

7. Remove fillets from the board, throw them in the trash, and eat the board.

Better start doing some trap shooting to get ready for open season on asian carp.
